Raw materials need to be prepared

  • Glutinous rice: 1kg
  • Water: 5l
  • Salt: 8g
  • White sugar
  • Ship ash powder: 30g
  • Pure cane juice
  • Banana leaves or bamboo leaves
  • Lat tie the cake

Steps to take

When you have prepared all the ingredients, you can proceed to make ash cake in steps of soaking rice, wrapping cake, boiling cake and making molasses as follows:

Soak the rice

– Wash glutinous rice, soak rice in water for 5-6 hours. You can add a little salt to the rice brine. After 5 to 6 hours of soaking, pour the salt water away and wash the rice again.

– Mix 30g of ash powder into 1.5 liters of water and stir until dissolved.

– Pour sticky rice into soaked ash water for 20-22 hours.

Package of cake

– Boil some water to blanch through the bamboo leaves. After blanching, you wait for new dry bamboo leaves to arrange 4 staggered bamboo leaves to prepare the cake package.

– You roll a piece of clean paper into a small cylinder and roll 4 bamboo leaves staggered around this roll. Then, you fold one end of the leaf wrapped with tangled wire and fix it around it.

– Pull out the inner roll to get a tube of rice leaves.

– Glutinous rice when soaked enough time, you picked out and washed with clean water. Water soaked in rice, you keep it to boil.

– You pour glutinous rice into the prepared leaf tube, as much or as little as you like. Then, fold the other end of the leaf tube and tie it firmly with string.

Boil the cake

– Put the wrapped cake in a pot and pour water in rice with a little water to cover the surface of the cake and start boiling for about 2 – 2.5 hours.

– When the bread is cooked, drain it over with normal water and drain.

Soak the rice

– Put glutinous rice in a clean bowl and pour the water mixed with ash water to soak for 20-22 hours. Note that the water must flood the glutinous rice surface. You can try to see if the rice has absorbed enough ash water by gently squeezing a few sticky rice grains holding two fingers. If you see a slight break of glutinous rice, it has absorbed enough.

Preliminary processing green beans

– Green beans without skin, then rinse with warm water for about 1-2 hours.

– When the soaking is done, add the green beans to the pot with some water and cook until the green beans are soft.

– You add some white sugar to the green beans while the beans are still hot and use a wooden spoon to quickly stir the green beans. You can also add mung beans to the blender for a smooth blend.

– Put green peas in a pan to slug with low heat to make the beans slightly dry. You taste the green beans again and add sugar if necessary.

– When the green beans are smooth, roll the beans into small, round balls and place on a plate.

Package of cake

– Rinse the bamboo leaves into a pot of boiling water to blanch briefly. Boiling water will make the leaves softer and easier to pack.

– Stack two leaves of bamboo on top of each other, then roll the top of the leaf into a funnel.

– Scoop a piece of glutinous rice into a leaf hopper and put 1-2 green beans in the middle. Then, you scoop more glutinous rice into the funnel so that the rice covers the green bean paste.

– Use spoon to press the ingredients together.

– Fold the remaining corners of the bamboo leaf neatly so that the leaf is completely covered. Then, you use firm crackers firmly.

Boil the cake

– You boil a pot of boiling water and put the ash cake to boil for about 1-2 hours. You should keep the boiling water above the cake about 1 inch.

– When the cake is cooked, remove it and then rinse with cold water.

– Once the bread is drained and cooled, you can eat it with molasses following the recipe above or with sugar or honey to make it taste better.
