Ingredients (for 2 people)

・ pacific saury …… 2 tails
・ Rice …… 2 go
・ Water …… 400cc
・ Light soy sauce …… 1 tablespoon
・ Sake …… 1 tablespoon
・ Mirin …… 1 tablespoon
・ Salt …… 1/4 teaspoon
・ Sesame oil …… 1 teaspoon
・ Kelp …… About 10 cm
・ Ginger …… 1/2
・ Sudachi …… 1 piece
・ Myoga …… 2 pieces
・ Black pepper …… Appropriate amount

Tips for not letting the taste of saury escape

・ Sprinkle salt on the saury, let it sit in the refrigerator for at least 10 minutes, and then grill it. You can get a unique odor.
・ Do not put the saury in the clay pot from the beginning, but put it in the middle. It will prevent it from getting too hot and dry.
・ Be sure to remove the saury bones after they are cooked. You can also enjoy the taste from the bones.

For the head of the saury, make a notch up to the bone just behind the gills. Make a light cut in the abdomen in front of the anus. If scales remain, please take them with a kitchen knife first ♪

Cut the saury with the internal organs in half. Rinse the cut saury thoroughly with water and wipe off the water with kitchen paper. When the water is drained, put it in a clean vat and lightly sprinkle salt (outside the amount) on both sides.
