Cold squid soup

[How to make]
1. Cool the soup stock in the refrigerator. Cut the shiso into thin slices and the Japanese ginger into round slices. Cut the cucumber into thin slices, sprinkle with a little salt, leave for about 5 minutes and squeeze the water. Cut the squid into small pieces. The best way to make soup stock is to boil it in boiling water and leave it overnight. Add little by little to the miso and mix to make it smooth.
2. Put 2 tablespoons of miso in a bowl and add the soup stock little by little to dissolve. Add sesame seeds and ginger, mix, add 1 vegetable and squid, and add tofu by hand. Cover with plastic wrap and leave in the refrigerator for about 20 minutes to cool and serve in a bowl. Put rice in another bowl and sprinkle with cold soup to eat.
